Super Duper Chicken Noodle Soup

Well, tis the season, fa-la-la-la-la! Tis the season we hear rumors of bouts of flu running around! Schools closing and clinics full... it's enough to make you want to wrap yourself in bubble wrap and carry a long stick!


Thankfully, there are steps you can take that can assist your immune system in the fight against these nasty germs! Yes, Vitamin C and Elderberry are great ideas, but it's important that we build our terrain with real food!


Remember, only 20% of our vitamins are actually absorbed into our bodies; that means that 80% of our good intentions are flushed down the drain with every capsule you take!


The body is designed to absorb nutrients from, you guessed it, food you ingest! So, why not make our food the healthiest, more nutrient-packed it can be?


This scrumptious soup is a phenomenal boost for your immune system with hints of turmeric, onion, and freshly made chicken and broth! The broth alone contains collagen, Vitamins A and D, and many other nutrients which is why our mothers were quick to break out the Chicken Noodle Soup at the first sign of a sniffle!


The kicker is, by the time you open a highly processed can of store-brand Chicken Noodle Soup, the nutrients have long since lost their potency. Essentially, grabbing canned Chicken Noodle is just a stroll down memory lane that may comfort you but does not boost your immune system or strengthen your white blood cell response.

Today, I want to share another great recipe that uses your precooked whole chicken and freshly made chicken broth. I honestly hadn't planned on showcasing this show stopper just yet, but just this morning, I received a call from my husband. He was slogging it through work with a horrible headache, sore throat, and runny nose.


The thought crossed my mind to order a quick Wal-Mart delivery to his office with some over-the-counter cough suppressants and throat lozenges, and then I realized that these medications only prolong sickness by blocking the body's immune response.


Our nose runs because it is expelling irritants and germs. It is the body's way of ridding itself of illness. We, however, in our quest to stay busy and keep on trucking, often take over-the-counter medications intended to stop our immune system from functioning.


A better response to a runny nose is a hot shower to help the sinuses drain and use of a Netty Pot for draining out allergens and irritants. To relieve the inflammation that comes with a runny nose and sore throat, turmeric is a vital tool in relieving the swelling. It can be used in chai (see our Turmeric Milk Chai) or in great recipes like this one!


It's important that we work with our immune system--not against it! This incredible, comforting yet tasty Super Duper Chicken Noodle Soup is just the ticket!


In fact, when I received that call from my husband, I sprang into action and started thawing out some fresh broth and chicken! In about 15 minutes flat, I had the ingredients for this hearty soup in the crockpot and cooking. One hour later, they were ready to take to his office along with some Fire Syrup!


To prevent any issues with the kids or me, we enjoyed the same yummy lunch and decided on some oranges for dessert, just to boost our Vitamin C!


I hope you enjoy this recipe as much as we always have! Like I said, it can be cooked in your crockpot for one hour on high, or, if you need it to sit a bit, it can be cooke on high for 4 hours or low for 8. It all depends on what kind of pinch you're in or how well done you prefer your vegetables and onions.


Super Duper Chicken Noodle Soup Recipe


Servings:

6-8 servings


Chicken Noodle Soup Ingredients:

  • 1 cup carrots, diced

  • 3-4 celery ribs, diced

  • 1 small onion, diced

  • 3 tsp parsley flakes, or 3 sprigs fresh parsley

  • 1/2 tsp Italian Seasoning

  • 1/4 tsp celery seed

  • 1/2 tsp Whiz Bang Parson's Pantry Seasoning

  • 1/4 tsp ground pepper

  • 2 cups sour cream

  • 2 cans Cream of Mushroom Soup (In the video, I said to use Cream of Chicken, but I recently tried it with Cream of Mushroom and it's even better!)

  • 2-3 cups precooked chicken, or 3 cups raw chicken

  • 4 cups wide egg noodles


Chicken Noodle Soup Directions:

  1. If you prefer softened onions in your soup, saute them lightly in 2 Tbs butter or avocado oil. Note, sauteing the onions removes more of the nutrients than simply popping them into the crockpot, but on this, go with your preference!

  2. Fill the crockpot with roughly 10 cups chicken broth.

  3. Add the seasonings and stir well to blend.

  4. Add the carrots, celery, and onion.

  5. Add the precooked chicken. If you do not have precooked chicken, you may use raw diced chicken. If you use raw chicken, however, the crockpot will need to cook for 4 hours on high or 8 hours on low to ensure the chicken cooks completely through. If using precooked chicken, the time can be adjusted from 1-8 hours, according to whatever is more beneficial for your timing that day.

  6. Add 4 cups uncooked wide egg noodles to the crockpot and stir well, fully submerging them.

  7. Turn the crockpot to High and cook for at least 1 hour, if using precooked chicken, or 4 hours on High or 8 hours on Low, if using raw chicken or if you desire softer vegetables.

  8. Serve with a nice, crusty bread, or crackers!
