White Chicken Chili

"I see your weight is a bit more than it should be."


I swallowed hard. My cardiologist was not one to mince words. He wasn't exactly being unkind; he sat there puzzling over my chart and pondering what was wrong with my heart this time.


"Hmm, do you have kids?"


I nodded in the affirmative, and his eyes lit up. "That must be it! How old is the youngest?"


"Um, four..."


He sat back down, "Well, that's not it."


"No, doc, that's not it! It's the slices of cheesecake, dirty Root Beer, bread and butter, and late night eating!" At least, that's what I wanted to say.


"Well, it's got to come off."


That was the sentence I had feared... but never in a million years would expect from my cardiologist. It started me on a weight loss journey on which I lost 30 pounds!


One of the phenomenal recipes I stumbled across while trying to lose weight but also eat tasty food was Whole 30 White Chicken Chili from My Life Well Loved! Believe it or not, a serving is only about 30 calories but it's still filling!


A few personal tweaks and we were addicted!


In fact, even after our diet ended, this recipe has remained a staple for us in winter time for its savory blend of flavors, but also its inclusion of a super food!


Believe it or not, sweet potato is used for more than sweet potato casserole and candied yams! In fact, it is one of the main ingredients in this chili!


How are sweet potatoes a super food, you ask? Surprisingly, this humble vegetable is an excellent source of Vitamin C, containing 20% of your daily intake needs! This super food is chockful of minerals, Vitamins A, B, and C, antioxidants, beta-carotene, and fiber. That fiber can actually aid in weight loss, reducing belly fat.


Using this recipe with the healthy scratch recipe for Whole Chicken and Chicken Broth, you also add turmeric, collagen, and other nutrients that boost your immunity.


Not only are sweet potatoes a main ingredient, but the chili also contains Cayenne and Cilantro, which both build the immune system, making this chili a terrain builder!


One of the most important things you can do with your meal planning is not just fill the belly, but build a healthy immune system. When you have a healthy terrain, cold and flu season is far less formidable. By eating nutrient-rich meals on a daily basis, you enable your body to respond more effectively to ward off viruses and bacteria.


This phenomenal, healthy chili goes well with taquitos or even a crusty bread with butter. It is also an excellent recipe you can double or even triple, and freeze in gallon freezer bags for evenings you need a night off from the kitchen. We sure do! As I've said, over time, we've made it our own and now, it's yours!


So, let's make it!


White Chicken Chili Recipe


Servings:

6 servings


Ingredients:

  • 3 cups precooked chicken

  • dash onion powder

  • salt and pepper to taste

  • 1/2 tsp garlic powder

  • 1/2 tsp cayenne

  • 3 large sweet potatoes

  • 2 bell peppers, diced

  • 1 large onion, diced

  • 1 bunch cilantro, chopped

  • 8 cups chicken broth (see our recipe for Chicken Broth)


Directions:

  1. Clean and score the sweet potatoes with a large X. Then, boil them for 15 minutes.

  2. Pull the sweet potatoes and set them aside.

  3. Add the chicken broth to a large pot along with the salt, pepper, onion powder, cayenne, and garlic powder. Heat to boiling, and then turn to medium-low heat to simmer for roughly 10 minutes.

  4. In a separate skillet, saute the bell peppers and onion.

  5. Once the sweet potatoes are slightly warm, rub each one vigorously between your hands to remove the peels easily. Once peels are removed, dice them for the chili.

  6. Add the sweet potatoes, bell peppers, onions, chicken, and cilantro to the pot. Simmer for 15 minutes.
